CAFE BRULOT GRAND MARNIER

  • 2 (6.0 cl) Sugar Cubes Cinnamon Stick
  • 8 (24.0 cl) Cloves
  • Outer Peel of Orange
  • Outer Peel of Lemon
  • Small Piece of Vanilla Bean
  • 3 oz. (9.0 cl) Grand Marnier®
  • 2 oz. (6.0 cl) Cognac
  • 1 pint (48.0 cl) Black Coffee
  • 2 (6.0 cl) cinnamon stick

Mix in: Irish Coffee Cup

Put all ingredients, except spirits and coffee, in a brûlot bowl or a chafing dish. Moisten sugar cubes with a little water and mash into orange and lemon peels with a muddler or heavy spoon. Add warmed Grand Marnier and cognac and mix well. Place a small sugar cube in a ladle and add a tbsp. of cognac that has been warmed. Ignite and pour blazing into bowl. After a few seconds pour in coffee and stir.

CAFE DE PARIS

  • 2 oz. (3.0 cl) Gin
  • 1/2 oz. (1.5 cl) Anisette
  • 1 (3.0 cl) Egg White
  • 1 oz. (3.0 cl) Heavy Cream

Mix in: Whiskey Sour Glass

In a shaker half-filled with ice cubes, combine all of the ingredients. Shake well. Strain into a sour glass.

CAFE DI LIMONI

    Mix in: Irish Coffee Cup

    Pour Villa Mass and Orange Liqueur into coffee cup, fill with coffee, top with whipped cream.

    CAFE FRENCH

    • 0.5 oz. (1.5 cl) Triple Sec

    • 0.25 oz. (8 ml) Bailey's Irish Cream®

    Combine black coffee and hot chocolate in a mug and top with whipped cream. Sprinkle cinnamon and/or nutmeg on top.

    CAFÉ CURATAO (HOT DRINK)

    • 4 oz. (12.0 cl) Hot Coffee
    • 1.33 oz. (4.0 cl) BOLS Triple Sec Curacao
    • Sugar, Super-Fine
    • Whipped Cream

    Mix in: Irish Coffee Cup

    Pour the ingredients in a warmed glass and add 4 g of sugar. Stir until the sugar has dissolved. Float whipped cream on top.

    CAFÉ DIANA

    • 6 oz. (18.0 cl) Southern Comfort®
    • 1/2 tsp. (2 ml) Lemon Juice
    • 4 (12.0 cl) Maraschino Cherries
    • 2 tsp. (8 ml) Maraschino Cherry Juice
    • 1/2 tsp. (2 ml) ginger
    • 1 Segment (3.0 cl) Orange
    • 2 tsp. (8 ml) Orange Syrup (Sweet)
    • 8 (24.0 cl) Cloves (Ground)
    • 4 cups (96.0 cl) Black Coffee
    • 4 (12.0 cl) cinnamon stick

    Mix in: Irish Coffee Cup

    Put all ingredients, except hot coffee, in the flaming pan of a chafing dish with several pinches of powdered cinnamon and several pinches of powdered nutmeg and stir well. When heated (do not boil), ignite and blaze for a few seconds. Pour in hot coffee, stir well, and serve in warmed cups with cinnamon sticks.

    CAFÉ WELLINGTON

    • 1/2 cup (12.0 cl) Whipped Cream
    • 1/4 tsp. (1 ml) Instant Coffee
    • 2 tsp. (8 ml) Coco Lopez®
    • 1 oz. (3.0 cl) Light Rum
    • Black Coffee

    Mix in: Irish Coffee Cup

    Blend whipping cream with instant coffee until it stands up in stiff peaks. In a heat-proof cup add coconut syrup and a little coffee and stir until syrup is dissolved. Add rum and stir well while filling cup with more coffee. Top with whipped cream.

    CAIPIRINHA (TRADITIONAL)

    • 1 (3.0 cl) Lime
    • 2 tsp. (8 ml) Sugar
    • 2 oz. (6.0 cl) Cachaca

    Mix in: Old Fashioned Glass

    Cut up the lime and put into a glass. Add the sugar. Smash the lime until the juice and sugar develops a rich froth. Add the Cachaca and shake vigorously. You may vary the amounts of lime and sugar to suit your taste.

    CAIPIRISSIMA

    • 2 (6.0 cl) Lime
    • 2 tbs. (3.0 cl) Sugar
    • 3 oz. (9.0 cl) Light Rum

    Mix in: Whiskey Sour Glass

    Same as Caipirinha but instead of cachaca you add WHITE RUM. It's great!!!!!!!!

    CALIFORNIA COASTLINE

    • 2 oz. (6.0 cl) Pineapple Juice
    • 2 oz. (6.0 cl) Sweet & Sour mix
    • 1 oz. (3.0 cl) BOLS Peach
    • 1 oz. (3.0 cl) Captain Morgan's Parrot Bay Rum®
    • 0.5 oz. (1.5 cl) BOLS Blue

    Mix in: Collins Glass

    Mix all ingredients in a blender for about 30 seconds. Pour over crushed ice, and garnish with a pineapple slice.

    CALIFORNIA COOL AID (2ND)

    • 1 oz (3.0 cl) Rum
    • 1 oz (3.0 cl) Cherry juice
    • 1 oz (3.0 cl) Raspberry Liqueur
    • 1/2 (1.5 cl) Lemonade mix
    • Orange Juice

    CALIFORNIA LEMONADE

    • 2 oz. (1 ml) Whiskey
    • Juice of 1 (3.0 cl) Lemon
    • Juice of 1 (juice of 1) Lime
    • 1 tbs. Powdered (3.0 cl) Sugar
    • 1/4 tsp. (0 ml) Grenadine
    • Carbonated Water

    Mix in: Collins Glass

    Shake all ingredients (except carbonated water) with ice and strain into a Collins glass over shaved ice. Fill with carbonated water and stir. Decorate with slices of orange and lemon. Add the cherry and serve with a straw.

    Cut the lime into 8 wedges and place in an old-fashioned glass. Sprinkle with granulated white sugar and crush together. Fill with crushed ice, add tequila. Serve with two small straws.

    Shift the cocoa and sugar together into a medium-sized saucepan. Dissolve the cornstarch in the water, and stir into the cocoa and sugar until it is a smooth paste.     Roast the beans until nearly charred; soak in the brandy for a week. Boil the sugar in water to make a thick syrup; allow it to cool and then combine with the brandy. Add the vanilla extract; strain and bottle for future use.
